This flour comes from Mino and his family in Puglia, Italy. I know them personally. I have seen how they grow this grain with my own eyes and that is the only reason it has the Bailey Approved stamp. This is not a product I found online. This is a relationship.
Grown by Mino & his family — Puglia, Italy
On the wild, rocky hills along the Apulian coast, Mino grows 100% ancient grain wheat the way it has always been grown — no irrigation, no organic herbicides, no modern hybridization. Just the earth, the rain, and grain varieties that have their own natural resistance to disease because they have never been touched by modern science. Natural reptiles and small mammals keep the insect population down. Legumes planted between rows feed nutrients back into the soil. And when you order, the wheat is milled fresh — not sitting in a warehouse. It arrives to your door the way flour was always meant to be.
Why this flour is different
100% ancient grain Tipo 0 — varieties never hybridized or modified, with deep root systems and natural disease resistance built in.
No irrigation — the earth provides what is needed. Nothing is forced.
No glyphosate, no herbicides — Mino uses natural remedies the way farmers did in ancient times.
Milled fresh when you order — not mass produced and stored. Your flour arrives alive, aromatic, and full of character.
Tipo 0 classification — retains more of the grain's natural bran, germ, flavor, and nutrients while still baking beautifully for everyday use.
