Tipo 1 flour is a traditional Italian flour classification that sits between refined white flour and whole grain flour. It behaves similarly to all-purpose flour in baking but retains more of the wheat’s natural bran and germ, making it more nutrient-dense and full of flavor.

This flour is made from ancient grain wheat grown by a small farmer in Puglia, Italy, where traditional farming practices are still preserved. The farmer does not spray wheat with glyphosate like is done to US flour. Instead of being mass-produced and stored for long periods, the wheat is grown naturally and is freshly milled after your order is placed, ensuring the flour arrives fresh, aromatic, and full of character.
